Fried chicken is typically dredged in flour, then a buttermilk-egg batter, then another coating of flour. The starch in the wheat flour delivers a coating that’s brown and crisp, while the protein in the flour allows the coating to cling to the chicken and stay in place. After brining the chicken to ensure juicy meat, testers ran a battery of gluten-free coating tests, trying cornstarch, rice flour, potato flour, potato starch, cornmeal and corn flour.
