Spring Vegetable Strata


This is a dressy meat-free entrée. Roasting the vegetables first gives them a delicious caramelized flavor. While strata is best when freshly baked, it can be prepared one day in advance and refrigerated. Warm it in a springform pan in a 250°F oven for about 45 minutes or until heated through. This recipe serves 6 to 8 as a side dish. For best results, do not replace the eggs.
