Hot Sauce


The now ubiquitous Sriracha (a.k.a. rooster sauce) is smoking-hot in culinary circles. It’s surprisingly easy to prepare at home. Try it in marinades and glazes for chicken. Mix it into burger meat, stir it into mayonnaise and add a few squirts to summer gazpacho. Using smaller red chilies, such as bird’s eye, will produce a hotter sauce. Store this fiery hot sauce in a glass jar in the refrigerator for up to 3 months.
