Gluten-Free Jam-Filled Macaroons

MAKES 12

Any gluten-free flour blend can be substituted for the rice flour in this Jam-Filled Macaroons recipe. When using a blend, more flour is needed as the dough will be sticky. Substituting a blend results in a texture more like cookies than macaroons—but still delicious. Store macaroons in an airtight container until ready to eat.
