MAKES 1 CUP

This is a great sauce to serve with crab cakes.

1 cup mayonnaise or light or egg-free mayonnaise
6 fresh garlic cloves, minced
1 tablespoon fresh lemon juice
Salt and pepper to taste
Pinch cayenne pepper or tabasco sauce or
2 teaspoons fresh tarragon finely chopped

1. In a small bowl, combine all ingredients and other seasonings of choice.
2. Cover and chill well.

Tip: Any mayonnaise product should be kept refrigerated and served chilled. You can serve aioli after chilling it for about 30 minutes, but it is better when chilled for several hours so that the flavors meld and mellow.
