Gluten-Free Turkey Tequila TacosGluten-Free Turkey Tequila Tacos

SERVES 4

This mild-flavored taco meat contains no onions, garlic or peppers. It has just a touch of heat from tequila.

1¼ pounds ground turkey
⅓ cup water
⅓ cup lime juice
1 teaspoon unsweetened cocoa powder
½ teaspoon cumin
2 teaspoons dried oregano
½ teaspoon celery salt
1 teaspoon dried thyme
¼ teaspoon cinnamon
¼ teaspoon freshly ground black pepper,
    if tolerated
4 tablespoons tomato paste (onion and
    garlic free)
2 tablespoons tequila
Gluten-free corn tortillas
Grated cheddar or other flavorful cheese or
    nondairy substitute
Shredded lettuce, carrots, jicama, cabbage and other favorite veggies
Diced fresh tomatoes

  1. In a large skillet, brown the turkey over medium-high heat. Drain any fat from the pan.
  2. Add remaining ingredients except tortillas, cheese and vegetables and turn heat down to medium. Cook until much of the liquid has boiled away.
  3. Set out dishes with chopped veggies, cheese and warm tortillas. Let everyone put together their own tacos for a fun family meal.

Each serving of filling contains 246 calories, 12g total fat, 3g saturated fat, 0g trans fat, 112mg cholesterol, 5g carbohydrate, 266mg sodium, 1g fiber, 26g protein.
