Dairy-Free Mayonnaise

MAKES 1 CUP

What’s the secret to great sandwiches and potato salads? Creamy mayo, of course. Most commercial brands are made with soy, dairy or eggs, so finding an alternative without these items can be a challenge. This recipe produces allergy-friendly mayo with delicious creamy results. Adding the oil at a snail’s pace is the key to emulsifying the mixture—patience is rewarded. This mayonnaise is better once cooled in the refrigerator.
