Black-Eyed Pea Hummus
MAKES 2½ cups
This creamy bean-based Mediterranean dip is the perfect gluten-free appetizer, rich in protein and fiber. Its especially nutritious when served with antioxidant-rich veggies, like cucumbers, peppers and celery.
