Turkey en Papitolle with Wild Rice and Herb Mustard Sauce

SERVES 4

The French cooking technique of preparing food in parchment paper packets (en papillote) keeps food like turkey breast juicy and aromatic. En papillote is perfect for a dinner party or a harried weeknight meal because the packets can be assembled ahead and refrigerated. Plus, it makes for a fanciful presentation as you can eat your meal directly from the opened packet. Paperchef (paperchef.com) makes excellent ready-to-use parchment packets.
