Gluten-Free Smoky Parsnip Mushroom Soup with Apple Chips

SERVES 4

The duo of chipotle and Lapsang Souchong tea gives this hearty Gluten-Free Smoky Parsnip Mushroom Soup with Apple Chips a shot of smoky goodness. Smoked over pinewood, Chinese Lapsang is also an exceptional drinking black tea. Most tea shops sell it. However, you can also use straight-up vegetable broth if the tea is not available. The pureed sunflower seeds add dairy-free creamy richness while apple chips provide a nice, sweet kick. Some health food stores sell apple chips or you can choose to serve this soup without them.
