Living Without's Favorites: Pure and Simple

Ever notice that many gluten-free baking mixes contain white rice flour, tapioca starch, sugar—and tons of empty calories? Elizabeth Kaplan did. When Kaplan, who has celiac disease, couldn’t find nutritious choices for her food-allergic children, she created them. Her company, The Pure Pantry, offers four cookie and pancake mixes made with organic whole grains that offer good taste and nutritional density without gluten, dairy, soy, nuts, eggs or preservatives. We quickly whipped up the buckwheat flax pancakes and served them to guests. These light yet hardy pancakes were gobbled up to rave reviews. Now four more organic mixes are about to join the product lineup—oatmeal cookies, sugar cookies, an all-purpose baking mix and a chocolate cake that contains quinoa. Certified kosher, these mixes prove you can have your cake—and nutrients, too.
