No More Corn
My son is gluten free, dairy free and corn free. How can I frost his birthday cake if I can't use powdered sugar? And he only likes vanilla frosting!

Editor’s Note: Commercial powdered sugar and baking powder usually contain corn. For corn-free substitutions of these key ingredients (plus a recipe for corn-free vanilla frosting), go to our Ask the Chef's section by clicking here.

Please also keep in mind that for the very corn sensitive allergy population, vanilla extract(any extract) is NOT safe. They are made with "grain alcohol." You can instead use ground vanilla bean, or vanilla sugar(throw a couple vanilla beans in a canister of cane sugar, within a week the flavor will have saturated the sugars.) Or, you can make your own vanilla extract. There are many clean brands of vodka that are Potato based, even a couple grape based. Simple cut open 5-6 vanilla beans add to a quart jar of vodka. Seal. Shake often. In about 2 months it will be ready to use.
