Living Without's Favorite Books: Bake It Simple
Roben Ryberg, founder of Miss Roben’s Gluten-Free Foods, is known for simplifying gluten-free baking. The author of Gluten-Free in Five Minutes, The Ultimate Gluten-Free Cookie Book and others, Ryberg announces her latest cookbook, You (Still) Won’t Believe It’s Gluten-Free! (Da Capo Press). Unlike most gluten-free bakers, Ryberg calls for a surprising shortlist of flours in her recipes—sometimes there’s just one. That, along with eggs, leavening and xanthan gum, generally provide the easy base. Then you’re off—from breakfast and breads to main dishes and desserts, recipes aren’t complicated by the usual “tower of flour.” Besides simplicity, the benefits are obvious—less money on ingredients and more room in your cupboard.
