Wheat Belly (Rodale) by cardiologist William Davis, MD, takes a hard look at the state of modern-day wheat. This best-selling book outlines the fascinating history of wheat modification and the science behind it. Wheat is firmly entrenched in both our culture (amber waves of grain) and our food supply (the staff of life), but the grain produced by today’s farmers ain’t the same grain that grandma used to eat. This book covers wheat’s dietary impact on heart health, weight gain and more but it’s a good read beyond that. With the incidence of celiac disease inexplicitly quadrupling over the last 50 years and reports of gluten sensitivity growing exponentially, Wheat Belly brings compelling data to the plate.
