With roughly 20 million Americans who are gluten free and 22 million who are “vegetarian-inclined,” multitudes of special-dieters are looking to sink their teeth into gluten-free, meatless food that’s delicious and satisfying. “Vegetarian-inclined” are those who never eat meat, those who eat meat sometimes and meat-eaters trying to consume more vegetables; the latter two are called “flexitarians.”
