If you’ve never tasted genuine, old-fashioned Italian salame, you’re in for a treat. San Francisco’s Columbus Foods uses natural aged pork, delicate seasonings and a technique handed down generations to produce artisan salame so authentic, you’ll think you’re in Italy. This Old Country-style salame has no gluten, MSG or trans fat. We sampled three—all crowd pleasers. Cacciatore, a small salame, is prepared with sherry wine. Secchi has a subtle aroma and mellow flavor. Finocchiona, aged 90 days, is seasoned with wild fennel seeds for a cool, sweet flavor. Slice and serve with gluten-free crackers for a grown-up appetizer. There won’t be leftovers.
