Gluten-Free Latkes for Hanukah

It took hours for my grandmothers to make potato latkes, a traditional Hanukah soul food. The two grated potatoes by hand until the grater nicked their knuckles. Then they fried the pancakes, a grayish gruel, in a thick layer of molten Crisco. I would steal the crispy treats from the platter before the sizzle faded.

The memory takes me back to the Hanukahs of my childhood but making latkes that way was not child’s play.

Thanks to the food processor, you can whip up these latkes in minutes, not hours. The short list of ingredients contains no gluten, dairy or trans fats. The recipe is so simple that you can make it throughout the year. No need to keep this delicacy just for Hanukah or to be Jewish to enjoy it.

Gluten-Free Potato Latkes

start to finish: 25 minutes

MAKES 18 TO 24 PANCAKES

A re-created classic, these latkes don’t taste exactly like Grandmother’s—they're better! Serve them with applesauce, apple jelly or dairy-free sour cream.

3 large russet potatoes (2½ pounds)
1 small onion
3 large eggs or 2 tablespoons olive oil
¼ cup gluten-free All-Purpose Flour Blend of choice
1½ teaspoons salt
Olive oil for frying

1. Peel potatoes, cut into small pieces and submerge them in a bowl of cold water to prevent discoloring. Peel onion and cut into pieces. Coarsely grate potatoes and onion using the grater attachment of the food processor. Transfer to a large mixing bowl. Add eggs or 2 tablespoons olive oil, flour and salt and stir to blend.

2. Line two cookie sheets with aluminum foil or parchment paper. Top each with a double thickness of paper towels.

3. Coat the bottom of a large skillet with olive oil (1 to 2 tablespoons) and heat to medium high. Drop about 2 tablespoons potato mixture onto hot oil. Press gently to flatten and fry for several minutes or until underside is golden. Flip and brown the other side.

4. Drain pancakes on cookie sheets while frying the next batch. Blot with paper towels and transfer to platter. Keep latkes warm until ready to eat.

Each latke contains 51 calories, 1g total fat, 0g saturated fat, 0g trans fat, 26mg cholesterol, 11mg sodium, 10g carbohydrate, 1g fiber, 2g protein.
