Vermont-based King Arthur Flour, the oldest flour company in America, has launched a line of gluten-free baking mixes (bread, brownies, chocolate cake, cookies, pizza crust, pancakes, muffins) that whip up quick and easy and taste delicious. KAF offers gluten-free flours, too: brown rice, tapioca starch, potato starch, multi-purpose and ancient grains. This last item is particularly notable—a 100 percent whole-grain milled blend of 30 percent each amaranth, millet and sorghum flours, plus 10 percent quinoa flour.
