After you boil the bagels, brush them with a wash of 1 egg white, if tolerated, and 2 tablespoons cold water beaten together. Then sprinkle each bagel lightly with the topping of your choice—poppy, sesame or caraway seeds, toasted onion, raw garlic bits, salt, etc. Bake as directed.
