We are dairy free so I have used coconut milk,rice milk,watered down coconut yogurt, and other alternative milks instead of the buttermilk.
I don't always have honey, and have used granulated sugar instead and just increased the milk by a tablespoon.
Our daughter is allergic to corn so I use guar gum instead of xanthan and instead of all the different flours, I just use 3 1/3 cups of my gluten free all purpose blend. (she is allergic to soy too)
Even after all those changes it has been a great recipe.
