Cheese substitutes
Anybody seen any really good non-dairy cheese substitutes? I want something to use on gluten-free pasta and also on gf pizza crusts that acts like mozzarella and TASTES GOOD!

In the April/May issue of Living Without, there was an ad on page 45 for a dairy-free, soy-free, casein-free cheese called daiya.
I ran out and bought a package of mozzarella and made lasagna with it today. It turned out great! I haven't used it on pizza yet.

I was told by a vendor of Cabot cheese that their aged extra sharp cheddar is actually lactose free. They actually had a flyer with a similar claim. Does anyone know if this is true? Has anyone tried it? It would make an affordable substitute. A dream come true!
