Gluten-Free Baguettes
My baguette dough seemed too wet so I added very small amount of GF flour but they really did not turn out. They look like Nan bread and have consistency of a biscuit. I did use Guar Gum instead of Xantham Gum but otherwise stuck to the recipe.
I don't think I will ever experience the texture of bread again...seems like maybe it is best to stop trying and experimenting with GF flours.

I had the same experience. Dough was more like a batter. I was so hopeful after trying the Popovers, which were wonderful. Not sure what I did wrong. Like the previous note I too added more flour, but this made the bread more woody. All in all very disappointing.
