Gluten-Free, Dairy-Free Irish Soda Bread

You are correct about traditional Irish soda bread. My father emigrated from Ireland in the 1950's and the featured recipe is what he always referred to as Bannock. Thank you for the gluten-free version, which I will try for St. Patty's day next week. A variation that he made for special occasions used mixed peel (candied citrus, with red and green cherries) in place of the currants - a family favourite!
