What's on Your Plate in 2012?

Every January 1st, do you make well-intended resolutions that seldom last? Me, too. But this year, I swear it’s going to be different. I’ve made just one resolution and I’m intent on keeping it and, hopefully, making it a lifelong habit. To the best of my ability, anyways.

My resolution is simply this: To eat better. By this I mean, to consistently choose foods that are wholesome and nutrient dense. It also means I intend to prepare and serve meals that feed the body rather than deplete it… Or at least, to try as best I can.

This is the way I’m trying to put the extra-special into my special diet. Yes, certain products or recipes may be safe for us. But are they truly good for us?

What’s on your list of New Year’s resolutions?

My resultion is similar, with a small twist - to eat better and to choose locally produced foods wherever possible. For me that means hitting the farmer's market and buying meat from a butcher who sources locally, and produce from local sources. In winter that means that for fruit either I have to limit myself to apples. or allow a little wiggle room. I am blessed to live in an area where we grow a lot of 'winter' vegetables, and salad veg hydroponically.

I attended a 6-week Healthy Eating Program back in March of 2009. This program was similar to the Mediterranean Diet........eating fresh vegetables, fruit, whole grains with concentrating on low fat, low sodium and low sugar. Since then, my husband and I have lost a total of 65 pounds between the both of us (my husband lost 45 pds) and we have been pretty much eating healthy. My husband's cholesterol and blood pressure came down into normal ranges. I also benefitted from the program with the weight loss, but also lowered my cholesterol from 204 to 177. Since being diagnosed as gluten-intolerant last year, I was surprised that I don't miss the bread products, pastries, pies, cookies and cakes.......but my resolution for this year is to concentrate on shopping the perimeter of the store and really, really eat fresh.
